easyI love this whipped feta recipe, it turned out a bit more runny, which was perfect for putting over a pita pocket sandwich and drizzling over a salad. Once it sits in the fridge for a day, it becomes a more whipped texture and stays delicious. I’d recommend trying both and this is a great dish to make the day before a dinner party to then serve with other spreads and dips. Tag a friend who you’d want to have a Mediterranean dinner party with!
Ingredients
optional nuts to garnish pine nuts or pistachios
1 hyphen 2 tbsp extra virgin olive oil more as needed
8 ounces block feta drained best to not use the crumbled feta try to find feta that is still sitting in brine traderjoes has a great vegan feta
¾ cup greek yogurt non dairy
2 tbsp chopped fresh mint
1 lemon zested
1 tsp red pepper flakes
Instructions
Step 1
-combine feta cheese, greek yogurt, and lemon in a food processor. while it’s processing, add olive oil through the top opening
Step 2
-transfer the whipped feta to a serving dish and garnish with freshly cut mint, red pepper flakes, olive oil, and nuts
Step 3
-store in the fridge for up to 3 days
