Pasta salad with a harissa dressing

Okay this is the perfect summer salad. It’s fresh, it’s dynamic, it’s got some heat, and it’s packed with nutrients! This makes roughly 4 servings so it’s also perfect to bring to a potluck picnic or meal prep as your lunch for the week (that’s what I did and I wasn’t tired of it on day 4). Ingredients

2.5 tbsp harissa

1/2 lemon juiced

2 bell peppers

1/2 block vegan feta i used traderjoes

3/4 red onion

10 hyphen 20 basil leaves

1/2 cucumber

1 container protein pasta i used banza pasta

1/3 cup olive oil

salt and pepper

2 tbsp red wine vinegar

1 tsp dried oregano

1/2 tsp mustard

2 cloves garlic

Instructions

Step 1

-cook your pasta and chop all of the veggies.

Step 2

-mix your dressing together and combine with the rest of the salad ingredients.

Step 3

-enjoy!

-can be stored in the fridge for 3-4 days
