easyFor this week’s episode of Not a Sad Salad I wanted to make my favorite Erewhon salad at home because the lemon dressing pairs so nicely with the kale and I love the textures and nutrients from all of the seeds. It’s the perfect creamy and nutrient dense salad that tastes SOOOO good, you’re not going to believe it’s a salad!
Ingredients
1 1/2 hyphen 2 lemons juiced
1/3 cup hemp hearts
1/3 cup olive oil
1 1/2 tsp dijon mustard
1 hyphen 1 1/2 avocado
2 cloves of garlic
1/3 cup sunflower seeds
1 can white beans
1/3 cup pumpkin seeds
salt and pepper to taste
1 1/2 tbsp maple syrup
1 bunch of kale
Instructions
Step 1
-start by rinsing your kale and chopping into small pieces removing the stem. then add them to a large bowl with a pinch of salt and massage with your hands
Step 2
-mix the dressing ingredients together
Step 3
-add the rest of your ingredients to your salad bowl with kale then top with your homemade dressing
