you'll love these vegan "scallops" 🌱 i served with sweet potato purée and fresh vegetables .

Ingredients

vegetables

salt

pepper

sweet potato purée

4 eryngii mushrooms

2 tbs olive oil

Instructions

Step 1

Clean the eryngii mushrooms and slice them into thick, round pieces.

Step 2

Heat the olive oil in a skillet over medium-high heat.

Step 3

Add the sliced mushrooms to the skillet and sauté them for about 4-5 minutes until they become tender and develop a golden brown color.

Step 4

Season the mushrooms with salt and pepper to taste.

Step 5

Remove from heat and serve as desired.

Step 6

I served with sweet potato purée and fresh vegetables.
