ZUCCHINI FRITTERS WITH AVOCADO CREAM

delicious zucchini fritters with avocado cream 🌱

Ingredients

1 tbs flour 3 tbs water

3 green onions finely chopped

1/2 cup panko breadcrumbs

lemon juice

1 garlic clove finely chopped

avocado

vegan yogurt

salt and pepper to taste

2 medium zucchini grated

Instructions

Step 1

Plate the grated zucchini in a colander and sprinkle with a little salt. let it sit for about 10 minutes to allow excess moisture to drain. squeeze out any remaining liquid with your hands or fabric.

Step 2

Combine with all other ingredients, except avocado, lemon juice and vegan yoghurt.

Step 3

Heat a small amount of olive oil in a non-stick skillet over medium heat.

Step 4

Spoon about tbs of the zucchini mixture onto the skillet and flatten it gently with a spatula. cook for 2-3 minutes on each side, until golden brown.

Step 5

For avocado cream mix 1:1 avocado and veg yogurt until smooth, using blender or fork, add salt and lemon juice to taste.
