easycarrot cake is probably one of my favourite cakes ever. 🥕
Ingredients
2 tsp baking powder
1/2 cup coconut shredded
200g flour
powdered sugar
raisins
250g brown sugar
walnuts
4 carrots
3 eggs
cream cheese
160g olive oil
2 tsp cinnamon
Instructions
Step 1
Olive oil + brown sugar + eggs, mix.
Step 2
Add in flour + cinnamon + baking powder, mix, add in carrots + walnuts/raisins/coconut.
Step 3
In a prepared pan, oven to 180c, for about 30-40 minutes, depending on the pan size.
Step 4
For the icing i used cream cheese + powdered sugar.
